These carrot & coconut energy bites are so simple to whip together and taste so good, the mixture of the coconut and carrots create a sweet chewy texture yet they are still light and make for a great snack or even a breakfast alternative? They take about 10 minutes to make which is why they are one of The Nutritionistas favourite simple recipe ideas, so the real question is why wouldn’t you make them?
Ingredients
- 1 large grated carrot
- 1/2 cup of gluten free oats
- A handful of dates
- 2 tablespoons of desiccated coconut
- A tablespoon of melted coconut oil or raw honey
- A handful of mixed nuts and seeds (I use walnuts and sunflower seeds)
Instructions
- Grate the carrot
- Then put all ingredients into a blender until it sticks together
- Roll into bite sized balls
- Refrigerate for around an hour
- Enjoy :)
Nutritionista Notes
- Refrigerating these makes them set better so they are less likely to crumble
- I also find they taste better after being in the fridge for a hour or so
- They taste amazing on their own or with some fresh yoghurt
