Before I talk about The Nutritonistas number one Superfood Seed and Nut bread recipe we first need to talk about bread. When I talk to people about eating healthily and about making the right food choices I often get “but I miss bread so much” or “I can’t give bread up”. Which I totally understand, bread is a firm cupboard staple in most households. As a child growing up there was always a loaf of bread, some crumpets and maybe a french baguette or two in the food cupboard for good measure. So I understand that giving up bread is difficult for many when they are looking at their diet. So I decided to find a recipe for bread and share it on The Nutritionista which was super healthy and nutritious and tasted amazing too oh and did I mention its gluten, dairy, wheat and refined sugar free and vegan friendly!
A bread that’s good for you? I can hear you celebrating already!
Also I have to mention the taste of this bread, everyone who has tried it has commented on how full of flavour and tasty it is. The blend of ingredients gives it a rich nutty taste, which is enhanced by the use of Maca powder (a superfood). To me this bread beats any ‘white sliced loaf’ hands down, try it and see for yourself.
Ingredients
- 1 cup of sunflower seed
- 1 cup of ground almonds
- 1/2 cup of flaxseeds
- 1 cup of gluten free oats
- 1 tablespoon sesame seeds
- 2 tablespoons of chia seeds
- 3 tablespoons of psyllium husk powder
- 1/2 cup of coconut flour
- 1 tablespoon of maca powder
- 2 cups of water (filtered or bottled)
- 3 tablespoons of coconut oil (warm)
- 1 1/2 tablespoons of maple syrup
- himalayan rock salt (sea salt will do)
- Black pepper
- Mixed herbs
Instructions
- With a blender or food processor combine the almonds, flax seeds, sunflower seeds, and chia seeds and grind until a powder is created.
- In a mixing bowl, whisk together melted coconut oil, maple syrup and water until combined.
- In another mixing bowl, combine the ground nuts and seeds with all other dry ingredients.
- Pour the wet mixture into the dry ingredients mixing bowl
- Whisk well combined- the psyllium husk, chia, flax seeds, and coconut flour will rapidly absorb the water and create a dough texture.
- In a lined bread tray (standard size 9×5) pour the dough mixture into the tray.
- Evenly spreading the mixture and pressing down until firm and flat on the top.
- Let the dough set at room temperature for about 2 hours. This allows the the chia seeds, flax seeds, psyllium, and coconut flour to absorb all the liquid.
- Preheat oven to 170 degrees and bake for 50-60 minutes, remove bread from the tray and place the loaf directly back into the oven and bake for another 30 mins until golden brown and firm.
- Let cool at room temperature- make sure the bread has properly cooled before serving.
- Store the bread in an airtight container in the refrigerator.
- Enjoy :)
Notes
- This bread should last a few days in the refrigerator (I wouldn’t know for sure my family and friends demolish it within a few days)
Best Served with
- Just coconut oil melted in- delicious
- Avocado with rock salt and pepper and a squeeze of lemon
- Almond or tahini butter
- Raw honey
- The Nutritionistas personal favourite is crushed avocado with smoked salmon
