Coconut Macaroons

Coconut macaroonsChocolate and coconut are two of my favourite things so why not combine them into macaroons? Obvious decision right? So here is The Nutritionistas coconut and chocolate macaroon recipe. Its pretty simple to throw together which makes this recipe an instant hit, so if you fancy something tasty and simple to throw together then these macaroons might just be the recipe you are looking for :)

Ingredients

  • 6 egg whites
  • 1/4 tsp himalayan salt (seat salt will also be fine)
  • 1/2 cup raw honey
  • 1 tbsp vanilla (not a necessity)
  • 3 cups unsweetened desiccated coconut
  • 1/2 cup dam chocolate- my favourite is pana chocolate as its raw and organic and so tasty but any dark, organic chocolate will do :)

Instructions

  • Preheat oven to 350.
  • Whisk together egg whites and salt on high speed until stiff peaks form, at least 5-6 minutes (make sure you do this long enough!)

  • Fold in coconut 1 cup at a time using a spatula.
  • Drop heaping tablespoons of the mixture onto a baking tray lined with baking paper.
  • Bake for 15-17 minutes, or until coconut is lightly browned.
  • Let cool on baking sheet for 10 minutes, then transfer to wire rack to cool completely.
  • Once completely cool, melt chocolate and coconut oil together over the stove/ or in the microwave
  • Mix chocolate and coconut oil well and drizzle over cookies as desired.
